This is one of our special dishes, we serve corn chicken flautas poblanas, topped with our traditional Mole sauce (Mole is a bit of a fusion food, is a very traditional dish from Mexico and is made with a lot of ingredients and has very complex layers of flavor). Mole sauce is labour-intensive and time consuming, despite the fact, here at El Colima the Mole is prepared every day fresh to be served on your table. The flautas Poblanas are filled with chicken that is slowly cooked in its own juices, tomato and spices. Served with mozzarella cheese, lettuce, tomato, sour cream and guacamole. Accompanied with rice and beans.
